Normally, due to sustained high demand for their products, most distilleries in Scotland are cranking out spirit 24-hours-a-day, every day — except 6-8 weeks when it’s very warm. There are two reasons for this:
1) Water is scarce in the Summer since it rains less;
2) What water they do have is too warm to run the condensers efficiently.
So…they take the opportunity each year to take 6-8 weeks to take a break and do maintenance, take holidays, and get ready to resume distilling when the weather cools off and the rain returns.
